Happy homemaker



This weekend I decided I wanted to roast a chicken, rather than buying the rotisserie ones all the time. Plus, I'm trying to work on meal planning, and a lot of the sites I read say to have cubed and shredded cooked chicken in your freezer so you can just pop it out when you need it. So, off to Target we went to get a roasting pan and to Safeway to get a chicken.

I'd never roasted a chicken in my life. Until about a year ago, I'd never even TOUCHED raw chicken. Blech. But, I donned my rubber gloves, pulled the bag out of the cavity (yuck, that word makes me cringe), seasoned it up, and stuck some onion up its butt. Into the oven it went! And went. And went. Freaking thing took forever to cook! The timer finally popped out about 2 hours in.

Chris showed me how to carve it (for future reference) and a little while later I had cubed and shredded chicken sitting in my freezer. Woot!

And then. And THEN. I made stock! My gas bill's gonna be insane this month from all that cookin'.

We were so excited about it that we went out to BJ's and got ourselves a two-pack of roasters and we're gonna cook them up this week also.

Next up...bread.

I had to laugh. Two hours is not forever for a whole chicken. Your chicken looks yummy!

You can roast a chicken in a crock pot too. . . or find a recipe for beer butt chicken and cook it in the oven (in your new roasting pan).

Since I know how much you love using your crock pot Check this out. So many recipes so little time.

One thing I forgot to mention. If you're going to be roasting a lot of chicken, get either an instant read or digital probe thermometer. You can't always trust those little plastic pop out timers. It's a good kitchen tool to have.

two words... bread machine. I got one for Christmas and use it all winter!!

Bread is way more fun and easier to make. The biggest part is waiting for it to rise. Oh and you have to remember to either eat it fast or refrigerate it b/c it goes bad quickly.

Nah, you don't need a bread machine. Just some old-fashioned elbow grease for kneading. We make bread once a week. :) B. loves it!
